注意! レバーを避けたほうがよい場合

妊娠中および痛風の方は注意してください。食品中に含まれるビタミンAには、植物性食品に多く含まれるプロビタミンA(βカロテンなど)と動物性食品に多く含まれる既成ビタミンAの2種類あり、レバーに含まれる既成ビタミンAは、摂取量が一定を超えると子供の先天性欠損症に関係すると考えられています[#]Rothman KJ, Moore LL, Singer MR, et al. Teratogenicity of high vitamin A intake. N Engl J Med. 1995 Nov 23;333(21):1369-73.

こうしたリスクがあるからといって、妊娠中にビタミンAを摂取してはいけないわけではありません。妊娠中でもビタミンAは必要な栄養素です。しかし、レバーには他の食品に比べて大量のビタミンAが含まれています。妊娠中のビタミンAの1日の摂取量の上限は、牛レバーにするとわずか30gとも言われています。妊娠中は、レバーには大量のビタミンAが含まれていることを忘れずに、食べる量に十分に気をつけましょう。

なお、妊娠中でない場合でも、長期にわたりビタミンAを大量に摂取すると病気の原因になってしまいます。レバーは栄養の宝庫だからと言って毎日たくさん食べるのではなく、週に数回のちょっとしたサイドディッシュ的な存在として扱うことをおすすめします。

また、レバーはプリン体を比較的多く含むので、痛風の方は避けた方がよいでしょう。

人間が1日に必要な栄養素を、わずかな量で満たしてくれるレバーは、身近で手軽なスーパーフードです。しかも筋肉を落とさずにダイエットできるなんて、夢のような食品ですよね。「味が苦手」という方も、調理を工夫して、ぜひ日常生活に取り入れてみてくださいね。
